Kobe and Matsusaka are the names people know abroad. Omi is the oldest of the three — raised in Shiga prefecture on the water of Lake Biwa, and prized in Japan for more than four centuries.

Thin threads of fat run right through the muscle, so it melts at a lower temperature and stays tender however you cook it.
Every Omi cut we stock is A5, the highest grade in the Japanese system, judged on yield and on four separate measures of quality.

Every animal in the Japanese wagyu system carries a ten-digit identification number. The official certificate issued in Japan records it alongside the producer, the breed, the grade and the date — and we have published ours, so you can read it before you order.
